cara crackine
Debic Parfait
Callebaut ice chocolate
Peanut brittle
Amaretto

Preparation

  • Whip the parfait base until airy in a stand mixer with a whisk attachment.
  • Add a tablespoon of cara crackine and a splash of Amaretto and whip briefly again.
  • Fill the choux buns with this mixture.
  • Place the filled choux buns in the Amaretto for a few minutes so they become nice and moist.
  • Store in the freezer.

  • Melt the chocolate and add some crunchy peanuts.
  • Dip the choux pastries in the chocolate and serve semi freddo.
