Hearts of goat cheese

Salad with hearts of goat cheese, immersed in a red beet jelly.This gives the beautiful red color to the hearts.

Ingredients

1goat cheese log

1Gelatin sheet
350gBeetroot juice
35gKappa
1Honey

mesclun salad
Cooked beets
roasted hazelnuts
goma dressing

Preparation

  1. Cut the goat cheese into slices.
  2. Cut these out with a heart-shaped cutter.
  3. Insert a skewer into the heart shape and chill well.

  1. Soak the gelatin sheet.
  2. Mix the beetroot juice, kappa, and honey together and carefully bring to a boil.
  3. Remove from the heat and add the melted gelatin sheet.

  1. Cut the beets into brunoise.
  2. Mix the salad with the chopped beets and dress with the goma dressing.
  3. Press the goat cheese hearts out of the mold and skewer them on a stick.
  4. Now dip the hearts in the red beet jelly for 1 second. Repeat if necessary.
  5. Place the hearts in between and sprinkle some roasted hazelnuts over the salad.
