Venison rack

Venison rack, also known as venison crown, prepared on the BBQ.

Big Green Egg - convEGGtor - drip pan - stainless steel grid - 140°C to 150°C
then: Big Green Egg - cast iron grid - 220°C to 250°C

Ingredients

Coarse sea salt
venison crown / venison rack

Preparation

  1. Remove the membrane from the meat if necessary and sprinkle with coarse sea salt.
  2. Cook the meat to a core temperature of 48°C.
  3. Grill on the cast iron grill grate for 6 minutes (3 x 2 minutes).
