
Hoisin chicken in pancakes

8Soy sauce
300mlhoisin sauce
4Brown soft sugar
1kgchicken thigh finely chopped
Peking pancakes
fine lettuce
Fresh coriander
Spring onion
Bean sprouts
Preparation
- Mix the hoisin sauce with the soy sauce and sugar and let it gently 'cook' for 2 minutes.
- Sauté the sliced chicken thigh in sesame oil.
- Add the sauce and let it simmer on low heat until the chicken is cooked through.
- Let the pancakes thaw, top with some of the chicken, then some sliced spring onion, freshly chopped coriander, fine lettuce, and some fried bean sprouts.
- Serve rolled up with a suitable dipping sauce.
