Hoisin chicken in pancakes

Delicious with a matching dip!

Ingredients

8Soy sauce
300mlhoisin sauce
4Brown soft sugar
1kgchicken thigh finely chopped
Peking pancakes
fine lettuce
Fresh coriander
Spring onion
Bean sprouts

Preparation

  1. Mix the hoisin sauce with the soy sauce and sugar and let it gently 'cook' for 2 minutes.
  2. Sauté the sliced chicken thigh in sesame oil.
  3. Add the sauce and let it simmer on low heat until the chicken is cooked through.
  4. Let the pancakes thaw, top with some of the chicken, then some sliced spring onion, freshly chopped coriander, fine lettuce, and some fried bean sprouts.
  5. Serve rolled up with a suitable dipping sauce.
