Hot buttered rum and advocaat foam

This cocktail consists of buttered rum & foam of advocaat.

Ingredients

50gButter
16Havana Club 3 Años
16Water
20gMonin Caribbean rum syrup

75gEgg yolk
150gCream
15gIcing sugar
80gWarninks advocaat
75gcappuccino milk

Preparation

  1. Mix all ingredients well together and heat gently.
  2. Whisk everything well with a whisk until the butter is melted and an emulsion forms.

  1. Mix all ingredients well using a hand blender.
  2. Place the mixture in a siphon and charge with two cartridges.
  3. Place the advocaat foam on top of the buttered rum in a glass.
