Indonesian noodle soup with shrimp & snow peas ('soto').The Indonesian cuisine is very diverse and has many authentic dishes. One of these is the traditional soup (soto). The blend is wonderfully fresh and powerful with characteristic ingredients such as kaffir, lime leaf, and tamarind. Delicious in, for example, a soup, noodle dish, or for seasoning rendang.

Ingredients

200gSnow peas
180gudon noodles
10gCelery
400gsliced leek
300glarge raw peeled shrimp
400ggarden peas
2vegetable bouillon cubes
4Euroma Soto

Preparation

  1. Put 2 liters of water, the bouillon cubes, and the Soto mix in a soup pot and bring to a boil.
  2. Add the noodles and cook for 10 minutes over medium heat. After 6 minutes, add the shrimp, snow peas, leek, and garden peas and cook for another 4 minutes. Season with salt and pepper if desired.
  3. Meanwhile, finely chop the celery.
  4. Divide the soup among bowls and sprinkle with celery.
