200gSilvia powder

Preparation
- Cut the tortilla into triangles.
- Fry the tortilla chips for 30 seconds at 160°C.
- Mix the sugar and cinnamon powder together.
- Remove the tortilla from the fryer and dust with the cinnamon sugar.
- Warm the cheesecake bottle under the hot tap so the mixture loosens well.
- Put the mixture in the bowl of the mixer.
- Whip the mixture until airy and transfer to a piping bag.
- Spread the compote over the cinnamon chips.
- Scoop a nice quenelle of ice cream and place it on the tortilla chips.
- Put the silvia powder and water in the bowl of the mixer.
- Whip the mixture until airy, this takes about 5 minutes.
- Transfer the mixture into a piping bag with a plain nozzle.
- Pipe small dots onto the nachos.
- Lightly torch with a blowtorch.
