100gWhite chocolate callets
500gCrème plus Mascarpone Debic
150gGreen apple fruit puree

100gGranulated sugar
6gGelatine
30gLime juice

Preparation

  1. Whip the cream plus mascarpone until soft peaks form.
  2. Melt the chocolate au bain-marie.
  3. Fold the apple purée into the mousse.
  4. Add the chocolate and fold in well.
  5. Pour into a piping bag and let cool completely in it.

  1. Peel the apples.
  2. Cut into brunoise and soak in lime juice.
  3. Stew the trimmings until soft with the granulated sugar to make a mousse.
  4. Soak the gelatin, dissolve in the warm mousse.
  5. Fold in the brunoise and let set completely in a mold.

  1. Pipe dots of mousse onto the plate.
  2. Place a feuilletée on top.
  3. Place the bar of compote on top and then add another feuilletée.
  4. Finish the top feuilletée with fresh apple, mousse, mint, and the remaining apple brunoise.
