
Caviar made from tapioca
These pearls of soy sauce taste delicious on a starter with, for example, smoked salmon.Ingredients

Preparation
- Take a tall pan and fill generously with water (tapioca pearls expand a lot).
- Add the desired amount of tapioca and bring gently to a boil. Stir occasionally, carefully, without breaking the pearls.
- Once a completely transparent 'pulp' is visible, the pearls are fully cooked.
- Transfer to a chinois and rinse gently with cold water until only the cooked, transparent pearls remain.
- Transfer the pearls to a sealable container and add about twice as much soy sauce.
- Let stand for at least a few hours so the pearls can fully absorb the soy sauce.
