Caviar of balsamic vinegar

No algin, citras, or gluco on hand? You can still make fake caviar.

Ingredients

200gbalsamic vinegar
8gvegetal
500gGrape seed oil

Preparation

  1. Bring 200 grams of balsamic vinegar with 8 grams of vegetal (gelling agent) to a boil.
  2. Place 500 grams of grapeseed oil in the freezer until it is thoroughly cold.
  3. Using a bottle, drip the balsamic mixture into the cold oil, so that small spheres are formed immediately. (This caviar is therefore not liquid inside.)
