These balls look just like real caviar, but taste like truffle.Ingredients
Chicken stock
Truffle tapenade
1lWater
2galgin (alginate) from Texturas
gelespessa (Sosa)
5gcalcic
Preparation
- Mix chicken stock with truffle tapenade to taste. Press the mixture through a sieve.
- For 250 grams of this mixture, add 2 grams of algin and a little gelespessa, so the mixture becomes a bit thicker and easier to dose.
- Mix 1 liter of water with 5 grams of calcic.
- Using a dosing bottle, drip small spheres into the calcic water.
- Rinse and serve as fake caviar.
