Truffle caviar

These balls look just like real caviar, but taste like truffle.

Ingredients

Chicken stock
Truffle tapenade
1lWater
2galgin (alginate) from Texturas
gelespessa (Sosa)
5gcalcic

Preparation

  1. Mix chicken stock with truffle tapenade to taste. Press the mixture through a sieve.
  2. For 250 grams of this mixture, add 2 grams of algin and a little gelespessa, so the mixture becomes a bit thicker and easier to dose.
  3. Mix 1 liter of water with 5 grams of calcic.
  4. Using a dosing bottle, drip small spheres into the calcic water.
  5. Rinse and serve as fake caviar.
