Kimchido toast

This Kimchido toastie is made with Kimchido from fine fermented foods: Korean kimchi with a sharp edge, made with seaweed instead of fish sauce.

Ingredients

2Butter
4sourdough bread
pinch of black pepper
200gmature cheese
2kimchido

Preparation

  1. Spread one side of the bread slices with butter. Place the slices butter-side down on a cutting board.
  2. Top two slices with a layer of cheese and kimchido.
  3. Finish with another layer of cheese.
  4. Press the other slice on top, butter side up.
  5. Grill the toasties over medium heat in a sturdy pan.
  6. For a crunchy outside: place a plate with something heavy on the toasties (or another pan) so there is weight on them.
  7. After 3 to 4 minutes, flip the toastie and wait until the other side is golden brown as well.
