Veal stock
butternut squash with chili and lime
chicken thigh crepinette with saffron
pumpkin cream with Oriental spices and pear
Preparation
- Sear the chicken thigh crepinette all around in olive oil.
- Heat the pumpkin cream and spoon it into the center of the plate.
- Dice a piece of butternut squash and sauté it in a little olive oil.
- Slice the chicken thigh crepinette and place on the pumpkin cream.
- Arrange the pumpkin cubes around and serve with the warmed veal stock.
