
Classic paella with mussels, cockles, and prawns

150gchicken thigh meat, coarsely chopped
2Garlic cloves

1red bell pepper, diced brunoise
1chorizo sausage
1Shallot, finely chopped
1red chili pepper, chopped

Preparation
- Slice the chorizo and sauté in a little olive oil together with the chicken thigh meat, prawn tails, chopped garlic, diced shallot, and sliced red chili.
- Add the red bell pepper.
- Sprinkle the rice over, briefly sauté, and pour in the fish stock.
- Bring to a boil. Add the tomatoes and saffron and let it cook gently.
- Add clams and mussels when the rice is almost done and the stock is absorbed.
- Season with salt and pepper and serve immediately.
