
Celeriac soup
A flavorful 'white' soup to start your Christmas dinner.Ingredients
700gceleriac cubes
100mlWhite wine
1lpoultry or vegetable stock
Fresh thyme
1units.itemsShallot
splash of cream
backerbsen
Dried ham
Preparation
- Finely chop the shallot and sauté together with the thyme in butter.
- Add the celeriac and sauté as well (do not let it brown).
- Then add the stock and wine and let it cook gently.
- Blend (in a blender) the soup and strain through a sieve.
- Check the seasoning (add salt if necessary).
- Finish the soup with cream and a few drops of olive oil.
- Garnish with crouton balls.
