Celeriac soup

A flavorful 'white' soup to start your Christmas dinner.

Ingredients

700gceleriac cubes
100mlWhite wine
1lpoultry or vegetable stock
Fresh thyme
1units.itemsShallot
splash of cream
backerbsen
Dried ham

Preparation

  1. Finely chop the shallot and sauté together with the thyme in butter.
  2. Add the celeriac and sauté as well (do not let it brown).
  3. Then add the stock and wine and let it cook gently.
  4. Blend (in a blender) the soup and strain through a sieve.
  5. Check the seasoning (add salt if necessary).
  6. Finish the soup with cream and a few drops of olive oil.
  7. Garnish with crouton balls.
