
Kohlrabi filled with kohlrabi cream, Granny Smith and leek oil

4gLiquid vegetable concentrate
4gRoast Umami intense flavours

15mlLeek oil
Preparation
- Cut the top off the kohlrabi. Hollow out the bottom with a spoon. Keep the hollowed kohlrabi in water with a little lemon juice until use, to prevent discoloration.
- Finely chop the onion and garlic. Sauté together with the kohlrabi filling.
- Cut the granny smith into brunoise. Set aside a quarter for garnish, sauté the rest along.
- Deglaze with the cream, water, vegetable stock, and roast umami. Let it cook until the vegetables are tender.
- Puree everything finely with a hand blender. Season with pepper and salt and add extra stock or roast umami if desired.
- Remove the kohlrabi from the water and pat dry.
- Heat the soup and ladle into the kohlrabi.
- Drizzle with the leek oil and spoon the granny smith into the soup.
