Prawn crackers made from tapioca pearls

Crispy crunchy prawn crackers made from tapioca pearls: airy texture, lightly savory, and perfect as a refined snack or luxury appetizer.

Ingredients

Squid ink
Tapioca pearls

Preparation

  1. Gently cook small tapioca pearls in plenty of water until translucent. Rinse well until only the translucent pearls remain. Mix half with a little squid ink and leave the other half clear.
  2. Spread the cooked black tapioca pearls thinly on a silicone sheet and carefully spread a few white, cooked pearls over them.
  3. Dry at 65°C (about 2 hours), the mixture may still be slightly moist.
  4. Fry in oil at 180°C until crispy.
