Preparation
- Gently cook small tapioca pearls in plenty of water until translucent. Rinse well until only the translucent pearls remain. Mix half with a little squid ink and leave the other half clear.
- Spread the cooked black tapioca pearls thinly on a silicone sheet and carefully spread a few white, cooked pearls over them.
- Dry at 65°C (about 2 hours), the mixture may still be slightly moist.
- Fry in oil at 180°C until crispy.
