Crispy polenta with mushrooms

Crispy polenta with mushrooms and cheese.

Ingredients

2.5lWater
Egg white
50gParmesan cheese (grated)
500ginstant polenta
panko (fine)
150gfried mushrooms

Preparation

  1. Bring water with salt to a boil. Add the polenta in stages, not all at once. Keep stirring until it thickens (with this polenta, it happens quickly, in about 3 min.), Let it cook through for a few minutes, stirring constantly.
  2. Slice and fry the mushrooms, let them drain, and stir into the polenta.
  3. Mix in the cheese and pour the mixture into trays (about 2 cm high).
  4. Let the mixture cool completely. Cut to the desired size, dip in egg white, then coat in panko. Fry in a pan with a little oil until crispy.
