Crispy fish bites: mussels, sole and claresse

This ‘borrelplank’ of fish bites consists of mussels, sole fillet strips, and claresse fillet. The approximate purchase price per person is: €3.61.

Ingredients

35mlOlive oil
55gGochujang red pepper paste
5gAonori seaweed powder
50gBatter mix golden crispy
80gClaresse fillet
50mlTap water
50gSole fillet
85gBreaded mussel meat
35mlSunflower oil
2gSweet potato cream
1gSnaqs sweet potato chips
2gParsley
1units.itemsLemon slice
20gKiwi and jalapeño salsa
12gremoulade sauce

Preparation

  1. Mix the kimchi base, Gochujang red pepper paste, sunflower oil, and olive oil well to make the marinade (recipe for 1 kg of fish).
  2. Cut the Claresse fillet into portions.
  3. Place the portioned Claresse fillet in the marinade and let it marinate for at least 6 hours.
  4. Mix the batter mix with water until smooth.
  5. Add the seaweed powder to the batter for extra flavor (recipe for 1 kg of fish).
  6. Cut the sole fillet into thin strips.
  7. Dip the sole strips in the seaweed batter.
  8. Fry the mussels and sole strips and cook the Claresse fillet.
  9. Place the mussels in a container and serve with remoulade sauce.
  10. Place the fried sole strips in a container with kiwi and jalapeño sauce and a slice of lemon.
  11. Serve the Claresse fillet in a container together with sweet potato chips and sweet potato puree.
