Preparation
- Whip the panna cotta until airy in a stand mixer.
- After 3 minutes, add the Monin almond syrup and powdered sugar.
- Whip until the mixture is firm. Transfer to a piping bag and let set in the refrigerator.
- Mix the Blue Band Blauw, powdered sugar, Monin Mai Tai syrup, and orange food coloring in a bowl.
- Pour the mixture into a siphon (kidde), close, and attach a gas cartridge.
- Shake well and store in the refrigerator until use.
- Mix the Monin Mai Tai syrup with the orange juice.
- Thicken with xanthan, blend until smooth, and store in a squeeze bottle.
- Pipe a layer of Mai Tai syrup into a dessert glass.
- Add a layer of almond panna cotta.
- Repeat the layers if desired.
- Top with the Mai Tai foam.
- Garnish with an amaretti cookie.
