Pomegranate marshmallows

The marshmallows have a flexible structure. This makes it possible to create beautiful shapes yourself.

Ingredients

300gSilvia egg white powder
50gpomegranate compound
150gWater
50gsanatine (easily soluble beef gelatin)

Preparation

  1. Mix the cold water with sanatine and let it soak for 5 minutes.
  2. Heat to 50°C (microwave is easiest) so the sanatine dissolves well.
  3. Mix this with the egg white powder and the compound.
  4. Then whip in the machine with a whisk on the highest speed until a firm foam forms.
  5. Pipe the mixture onto lines of fine sugar and let set (outside the fridge).
  6. The flexible marshmallows are now easy to shape, for example into a knot.
