Blueberry meringue

Silvia protein powder (28623456) is a mix based on egg white and sugar (Italian meringue in powder form).Easy to whip up with (cold) water and, for example, to use as flambé foam.

Ingredients

300gSilvia egg white powder
120gWater
50gblueberry compound

Preparation

  1. Whip all the ingredients together in a KitchenAid with a whisk attachment.
  2. Pipe and let dry in an oven at 85°C or in a dehydrator (65°C).
