Preparation
- Preheat the oven to 235°C.
- Score the fat on the roast slightly.
- Place the meat on a rack and roast until crispy in about 35 minutes.
- We serve this on a board with sautéed mushrooms, pumpkin, bread, and truffle mayonnaise.
