
Oxtail broth from the pressure cooker
An intense broth but with a short preparation time, ideal!Ingredients
1Tomato paste

Preparation
- Place the oxtail in a roasting tray. Put it in an oven at 220°C.
- Once the meat is nicely browned, add the bouquet and a spoonful of tomato paste.
- Roast for 15 minutes more and then transfer to a pressure cooker.
- Fill with cold water and bring to a boil. Cook under pressure for one hour.
- We strain the broth and clarify it the next day.
