Oxtail broth from the pressure cooker

An intense broth but with a short preparation time, ideal!

Ingredients

1Tomato paste
bouquet
oxtail

Preparation

  1. Place the oxtail in a roasting tray. Put it in an oven at 220°C.
  2. Once the meat is nicely browned, add the bouquet and a spoonful of tomato paste.
  3. Roast for 15 minutes more and then transfer to a pressure cooker.
  4. Fill with cold water and bring to a boil. Cook under pressure for one hour.
  5. We strain the broth and clarify it the next day.
