
Paella of black fideua and squid

Preparation
- Blanch the fideua for 3 minutes in salted water.
- Cut the squid tubes into rings and chop the cooked octopus into small pieces.
- Fry the squid tubes and octopus in oil.
- Add the chopped shallot and black garlic, fry briefly.
- Add the cooked fideua and season with salt.
- Optionally sprinkle with some chopped garlic and sliced spring onion.
