Pie tee with prawn and cauliflower

Appetizer from Malaysian cuisine. Easy to bake with a pie tee tang!

Ingredients

0.5Salt
2units.itemsEggs
400mlWater
110gRice flour
50gCornmeal
togarashi to taste
100gSifted flour
pie tee tang

chopped prawns
fine brunoise of carrot
finely chopped Spanish chili
small cauliflower florets
finely chopped shiitake
wasabi shoyu dressing

Preparation

  1. Whisk the eggs with the salt using a whisk.
  2. Then mix in the flour, cornmeal, and rice flour one by one.
  3. Finally, mix in the water.
  4. Strain the mixture and let it rest for an hour.
  5. Heat the tong in oil (180°C).
  6. Dip the tong in the batter and place in the hot oil.
  7. Shake the molds loose and fry until crispy.

  1. Stir-fry all ingredients except the dressing.
  2. When the ingredients are al dente, season with the dressing.
  3. Spoon this into the pie tee cups and garnish with cress and a little Japanese mayonnaise.
