Pizza with blood orange

Ingredients

400gWhipped cream
7gAgar
125gMilk

150gSugar
20gCreamy gel
1Egg
270gblood orange purée
1Egg yolk
100gButter
100gMascarpone

slices of fruit of your choice
chopped chocolate brownie
lime cress

Preparation

  • Place a slice of puff pastry in a sandwich press and bake until crispy.
  • Cut out to the desired size.

  • Put the blood orange purée, sugar, egg, egg yolk, and creamy gel in a pan and slowly heat to 80°C.
  • Cool down to 37°C and stir in the mascarpone and butter.
  • Chill until use.

  • Spread the crispy puff pastry with the blood orange cremeux
  • Pipe the caramel chocolate ganache in between.
  • Add some pieces of caramelized pear and a few slices of fruit of your choice.
  • And finally, some chopped chocolate brownie and lime cress.
