Hasselback pumpkin with bay leaf

Delicious vegetarian dish designed by Restaurant Triptyque.

Ingredients

2units.itemsButternut squash
12units.itemsBay leaves
8units.itemsStar anise
125gButter
125gHoney
Salt and pepper
grated zest of 1 orange

Preparation

  1. Preheat the oven to 200°C.
  2. Peel the pumpkins, cut them in half lengthwise, and remove the seeds.
  3. Place the pumpkin halves on a baking tray and bake them in the oven for 20 minutes.
  4. Then cut the pumpkin halves every half centimeter. Tear the bay leaves and insert them into the cuts.
  5. Add two pieces of star anise to each pumpkin half.
  6. Melt the butter in a saucepan and mix in the honey.
  7. Brush the pumpkins with the butter mixture.
  8. Bake the pumpkins for 10 minutes in the oven, then brush them again with the butter mixture. Repeat this three times (total oven time: 30 minutes).
  9. Season with salt and pepper to taste.
  10. Sprinkle with the orange zest.
