2Eggs
1topside of wild boar
Salt and pepper
100gpanko breadcrumbs
Preparation
- Cut thin slices from the topside and place between two pieces of butcher's foil, then flatten them.
- Beat the eggs in a deep plate or bowl, coat the flattened hind leg in flour, then in egg, and finally in panko breadcrumbs.
- Fry until crispy in oil at 200°C.
- Season with salt and pepper.
