
Salad of fried avocado and smoked trout

90mlwood-aged soy sauce
smoked trout
115mlCoconut milk
hass avocado
1Gelespessa
Wasabi
1Shallot
fresh salad mix
Lemon juice
Preparation
- Blend the coconut milk, stock, soy sauce, wasabi, and lemon in a blender. Use a hand blender to mix in the gelespessa so the dressing cannot split.
- Clean the Hass avocado and cut the flesh into brunoise.
- Finely chop the shallot.
- Sauté together in a little clarified butter and season with salt.
- Mix with smoked trout to make a salad.
- Combine with the salad mix and dressing and serve.
