Salad of fried avocado and smoked trout

With a dressing of coconut milk, stock, soy sauce, wasabi, and lemon.

Ingredients

100mlChicken stock
90mlwood-aged soy sauce
smoked trout
115mlCoconut milk
hass avocado
1Gelespessa
Wasabi
1Shallot
fresh salad mix
Lemon juice

Preparation

  1. Blend the coconut milk, stock, soy sauce, wasabi, and lemon in a blender. Use a hand blender to mix in the gelespessa so the dressing cannot split.
  2. Clean the Hass avocado and cut the flesh into brunoise.
  3. Finely chop the shallot.
  4. Sauté together in a little clarified butter and season with salt.
  5. Mix with smoked trout to make a salad.
  6. Combine with the salad mix and dressing and serve.
