Quick veal pastrami

A super quick version of the original pastrami.

Ingredients

25gLight brown sugar
5Garlic cloves
Veal eye of round
75gCoriander
5sprigs of stripped thyme
150gCoarse sea salt
75gPeppercorns

Preparation

  1. Blend all ingredients in a blender or food processor.
  2. Rub a veal rump with this and sear on all sides.
  3. Cook until medium rare in the oven (120°C, core 60°C).
