
Quick veal pastrami
A super quick version of the original pastrami.Ingredients
25gLight brown sugar
5Garlic cloves
Veal eye of round
75gCoriander
5sprigs of stripped thyme
150gCoarse sea salt
75gPeppercorns
Preparation
- Blend all ingredients in a blender or food processor.
- Rub a veal rump with this and sear on all sides.
- Cook until medium rare in the oven (120°C, core 60°C).
