
Sauerkraut mash with vegan sausage
Sauerkraut stamppot with a twist, we love it. The Vegan sausage is a delicious alternative to keep the dish completely plant-based.This recipe is for about 4 people.
Ingredients
250gvegan beef sausage
1kgSauerkraut
2kgPotatoes
6units.itemsjuniper berries
1units.itemsbay leaf
vegetable oil or plant-based butter
Pepper
Salt
optional: splash of wine
Preparation
- Peel the potatoes and cut them into equal pieces. Slowly cook them in water with salt until done.
- Put the sauerkraut, juniper berries, and bay leaf in a pan with a splash of water or wine.
- Bring to a boil and let simmer gently. Remove the juniper berries and bay leaf once the sauerkraut is cooked.
- Mash the potatoes and mix in the sauerkraut. Season with pepper and salt.
- Brown the vegan sausage nicely in butter or plant-based oil and serve with the sauerkraut mash.
