Sushi ice cream

Scoops of vanilla ice cream rolled into a 'sushi roll' using a sushi mat and then frozenInstead of nori sheets, a flat layer of cotton candy is used to roll the ice cream roll. Tip: vacuum the cotton candy for an even flatter result. Cut the roll into pieces and optionally garnish with sweet cresses.

Ingredients

Pink cotton candy sugar
Vanilla ice cream
Cotton candy machine
Lid for cotton candy machine
Sweet cresses

Preparation

  1. Roll out a sushi mat and cover it with a piece of butcher's foil.
  2. Spoon balls of (vanilla) ice cream onto the butcher's foil and roll it up tightly, forming a 'sushi roll'.
  3. Place the roll in the freezer to firm up.
  4. Meanwhile, use a cotton candy machine and cotton candy sugar to make cotton candy.
  5. Spread out the cotton candy and press it flat to form a thin layer. Tip: you can vacuum seal the cotton candy for an even flatter result.
  6. Take the frozen ice cream roll out of the freezer and roll it in the flat cotton candy.
  7. Cut the roll into sushi-like pieces.
  8. Optionally garnish with some sweet cresses.
