
Tiramisu with Passion Fruit
The classic tiramisu gets an exotic twist with the intense flavor of passion fruit, making this a delicious dessert.This recipe is for about 6 servings.Ingredients

250gMascarpone
115gbrown sugar
Vanilla sugar

Speculoos

4units.itemsEgg yolk
125gCaster sugar
50gCornmeal
5units.itemsgelatin sheet
500gWhipped cream
Preparation
- Separate the egg whites and yolks. In a bowl, blanch the egg yolk and sugar.
- Whip the egg whites until stiff.
- Add the egg whites to the egg yolk/sugar mixture, then fold in the passion fruit purée and mascarpone until a smooth consistency is obtained.
- Heat the passion fruit purée.
- Soak the gelatin in cold water to hydrate it.
- Mix the egg yolk and sugar, add the cornflour.
- Heat and whisk vigorously until it boils.
- Add the hydrated gelatin and let cool, then add the whipped cream and the cooled passion fruit purée.
- Crumble the speculoos and place on the bottom of a verrine.
- Alternately garnish with cream and passion fruit mascarpone.
- Repeat until the verrine is full.
- Top with fresh passion fruit seeds for decoration.
- Refrigerate for at least 24 hours before serving.
