Ingredients

20gLime juice
8gKnorr Professional Garlic
8gDjeroek poeroet
20gSunflower oil
20gred curry paste
40ggalangal
7Coconut milk
22gKnorr Chicken Bouillon 1-2-3
50gLemongrass
10gfish sauce
1units.itemsBunch of spring onions
1units.itemstray of purple shiso
0.25units.itemsBunch of coriander
5units.itemschicken thigh

Preparation

  1. Bring 1.2 liters of water to a boil and add the bouillon powder.
  2. Finely chop the galangal and lemongrass.
  3. Heat the oil and add the galangal, lemongrass, kaffir lime leaves, garlic, and curry paste.
  4. Add the lime juice, chicken stock, coconut milk, and fish sauce.
  5. Bring the soup to a boil and add the chicken.
  6. Lower the heat and let it simmer for about 35 minutes.
  7. Remove the chicken thighs from the soup and strain the soup through a sieve.
  8. Shred the chicken and roughly chop the coriander. Slice the spring onion into rings.
  9. Plating: divide the shredded chicken among the soup bowls.
  10. Ladle the soup into the bowls and garnish with coriander, spring onion, and shiso.
  • Tip: we also serve the Tom Ka Khai with finely chopped Granny Smith, red bell pepper, spring onion, coriander, lime zest, and very fine julienne of kaffir lime leaves.
