Preparation
- Bring a liter of water to a boil and, while stirring, add the weighed soup powder.
- Let the soup simmer gently for 5 minutes.
- For the bell pepper foam, mix the bell pepper puree and roast umami into the plant-based cream.
- Pour the mixture through a fine sieve into a siphon and charge with a cartridge.
- Ladle the soup into the bowls and pipe the bell pepper foam on top.
- Garnish the soup with tomato flakes and basil powder.
