
Tuna with passion fruit sweet and sour and avocado
Tuna served in a passion fruit broth, sweet and sour tomato, cucumber, red onion, and an avocado mayonnaise.Deliciously fresh dish with exciting flavor combinations!

300gpassion fruit puree without sugar
100gSushi vinegar
40gSpring onion
10gred Tabasco
50gGinger syrup
1Lime
15gFresh ginger
0.5Red chili
20gwhite soy
Pepper and salt
65mlWater
35gSugar
100mlSushi vinegar
Mini cucumber
Red onion
Lemon oil
basil oil
fresh tuna

Preparation
- Slice the mini cucumber and red onion on the mandoline.
- Roughly chop the spring onion and squeeze the juice of 1 lime.
- Mix all the ingredients together.
- Put the mixture in a bowl and place in the vacuum machine, infuse the mixture about three times (vacuum three times). If no vacuum machine is available, leave the mixture in the fridge for at least 1 night.
- Remove the pieces of spring onion, red chili, lime, and ginger from the juice and strain through a sieve.
- Boil the sugar, water, and vinegar and let cool.
- Optionally add flavorings (spices).
- Vacuum-seal the red onion with a little basil oil and the cucumber with lemon oil.
- Cut the tuna into nice pieces and season lightly with salt.
- Pour the passion fruit broth into the plate.
- Cut the cherry tomatoes in half.
- Distribute the cherry tomatoes, red onion, cucumber, and black sesame seeds in the broth.
- Place the tuna in the passion fruit broth (it will cook slightly from the acid, so do this at the last moment).
- Top with avocado mayo and lime cress.
