Seared tuna with kimchi

Seared tuna in a kimchi mayonnaise, topped with coriander, lime, furikake, chili strips, and katsuobushi.

Ingredients

fresh tuna
Sunflower oil

280gKewpie mayonnaise
50kimchi base

chili stripes
Furikake
katsuobushi
lime-coriander mayonnaise

Preparation

  1. Sprinkle the whole tuna with some salt.
  2. Seared the tuna with a blowtorch.
  3. Portion into nice slices.

  1. Mix the kimchi base with the kewpie mayonnaise.

  1. Place the kimchi mayonnaise on a plate and put the tuna on top.
  2. Finish the dish with katsuobushi, chili strips, furikake, and lime-coriander mayonnaise.
