
Tonka chocolate

260gWater
210gOil
530gbrownie mix
200kgMilk
1whipped cream
2tonka beans
decor gel chocolate
gcrue de cacao
Preparation
- Put all ingredients in a food processor and mix for 4 minutes on the lowest setting.
- Spread 1 kilo of batter over a 60 x 20 centimeter tray.
- Bake in the oven at 160⁰C for 35 - 40 minutes.
- Bring the milk to a boil and let it infuse with the tonka beans for 15 minutes.
- Let the milk cool to 35°C and mix with the fond.
- Fold in the whipped cream.
- Spread 1400 grams of mousse in a 60 x 20 centimeter tray and freeze.
- Cut the mousse and biscuit into pieces of 2.5 x 10 centimeters.
- Heat the decor gel and pour over the pieces of mousse.
- Place the mousse on the biscuit and finish with crue de cacao.
