Capers
tuna mayonnaise
Rocket
Cherry tomatoes
veal eye of round cooked sous-vide

Preparation

  1. Sear the veal mouse all around and chill.
  2. Slice the veal mouse thinly, place on the plate, and pipe the tuna mayonnaise in between.
  3. Serve with arugula, capers, and cherry tomatoes.
