Watercress soup

A delicious watercress soup with liver and Granny Smith. For this soup, we use Knorr white cream soup.

80gKnorr white cream soup
1units.itemsGranny Smith apple
10units.itemsOysters
3units.itemsslices of duck liver
50gHellmann's Sandwich Delight Cream Cheese
Salt and pepper
300mlPoultry stock
1units.itemsshallot (chopped)
50gCrème fraîche
300mlCream
Salt
beurre noisette
30mlNoilly Prat

Preparation

  1. Sauté the shallot in beurre noisette. Deglaze with the Noilly Prat, the stock, and the cream.
  2. Mix in the crème fraîche. Add the watercress to the mixture and blend while still warm.
  3. Strain the mixture and season with salt.
