Sourdough toast with smashed avocado, burrata and lemon zest

Ingredients

6Syros smashed avocado

Extra virgin olive oil
Coriander leaves (to taste)
Salt and pepper

Preparation

  1. First, make a mint oil by blending mint leaves, garlic, and olive oil until smooth. Season with salt and pepper.
  2. Toast the slices of sourdough bread until golden brown and crispy.
  3. Place the toasted sourdough on four plates.
  4. Evenly spread the smashed avocado over the toast.
  5. Place the burrata balls on top of the avocado.
  6. Grate lemon zest over each plate for a fresh flavor.
  7. Drizzle the mint and garlic oil generously over the burrata and toast.
  8. Garnish with fresh coriander leaves.
