
Black quinoa and jackfruit
Quinoa comes in many different colors and textures, so you can easily vary with it. In this recipe, we use black quinoa.Ingredients
4Eggs
1can jackfruit
leaf spinach
200gblack quinoa
sun-dried tomatoes
1Shallot
Olive oil
Lime juice
miso wok sauce
Garlic
Preparation
- Cook the quinoa according to the instructions.
- Poach the eggs.
- Rinse the jackfruit, cut away any hard pieces, and pull the rest into strands with a fork. Fry the flesh with the shallot and a little garlic, pour the miso wok sauce over and let it caramelize briefly.
- Toss the quinoa and spinach with a little olive oil and lime juice and fill a wide glass. Top with sun-dried tomato, poached egg, and spinach. Finally, add the fried jackfruit.
- Serve immediately.
