The cold cuts of San Vincenzo Di Fernando Rota originate in Calabria, located in the toe of Italy's boot. D.O.P. means that the products are of European protected and guaranteed origin. The pancetta, a beautiful pork belly, has a tasty meat-fat ratio and is also aromatically seasoned. The Salsiccia is a dried sausage prepared according to the original recipe in Calabria from selected lean meat from the ham and the fillet. The meat parts are then coarsely ground and enriched with salt and regional spices, including chili pepper. The drying takes place in the fresh and pure air of the Sila mountains.
