Appetizer with smoked goose

Inspiration from our chef: appetizer with smoked goose, presented in a crispy wonton pastry cup.

Ingredients

Mayonnaise
ratte potato
smoked olive oil
enoki mushrooms
wonton dough
smoked goose fillet
sweet and sour red cabbage
Chives
Crème fraîche

Preparation

  1. Cut the wonton dough into rounds with a cutter.
  2. Cut the round halfway through and fry between two small sieves to form a cup.
  3. Season the fried cup with salt and spices to taste.
  4. Cut the smoked goose breast into cubes and place in the cup.
  5. Sauté the mushrooms in olive oil and season during cooking.
  6. Peel the potato and cut into brunoise.
  7. Cook the potato brunoise until just tender in stock.
  8. Chop the samphire and briefly stew in butter.
  9. Mix with a little crème fraîche, mayonnaise, and chives.
  10. Mix this with the potato to make a salad.
  11. Spoon some of the potato salad into the cups and add the mushrooms and red cabbage.
