
Appetizer with smoked goose
Inspiration from our chef: appetizer with smoked goose, presented in a crispy wonton pastry cup.Ingredients
Mayonnaise
ratte potato
smoked olive oil
enoki mushrooms
wonton dough
smoked goose fillet
sweet and sour red cabbage
Chives
Crème fraîche
Preparation
- Cut the wonton dough into rounds with a cutter.
- Cut the round halfway through and fry between two small sieves to form a cup.
- Season the fried cup with salt and spices to taste.
- Cut the smoked goose breast into cubes and place in the cup.
- Sauté the mushrooms in olive oil and season during cooking.
- Peel the potato and cut into brunoise.
- Cook the potato brunoise until just tender in stock.
- Chop the samphire and briefly stew in butter.
- Mix with a little crème fraîche, mayonnaise, and chives.
- Mix this with the potato to make a salad.
- Spoon some of the potato salad into the cups and add the mushrooms and red cabbage.
