Parfait and shaved ice based on blue curacao liqueur.Discover a surprising twist on the classic 'fruits de mer'. We present a 'Plateau de Fruit de Dessert', a refined selection of sweets in the style of a luxurious seafood platter. We combine the elegance and presentation of fruits de mer with the rich flavors of patisserie.

Ingredients

Blue curacao
Parfait base

500mlWater
60mlOrange juice
100gFine sugar
Ice shaver
50mlBlue curacao

Mermaid decoration

Preparation

  1. Whip the parfait base until airy.
  2. Add blue curacao to taste (maximum 20%).
  3. Pour into small glasses and place in the freezer.

  1. Mix the ingredients until the sugar is dissolved.
  2. Pour into round containers and freeze.
  3. Shave fine 'granité' from it using the ice shaver.

  1. Spoon some of the shaved ice onto the parfait and garnish with a chocolate 'mermaid' decoration.
