Brioche with crispy manchego and truffle honey

Brioche fried in beurre noisette with manchego in a crispy green herb crust and served with chives and truffle honey.

Ingredients

Brioche
100gbeurre noisette
50gTruffle honey

Flour
Egg white
Panko green herbs
Manchego

Chives
violets

Preparation

  1. Make beurre noisette.
  2. Mix the beurre with the truffle honey.
  3. Cut the brioche to the desired size and brush it with the mixture.
  4. Slowly fry them in a pan over low heat.

  1. Cut the manchego to the desired size.
  2. Coat it in flour, egg white, and panko.
  3. Fry at about 175°C for about 2 minutes.

  1. Place the manchego on the brioche, top with chives, the violets, and drizzle with extra truffle honey.
