50gTruffle honey
Flour
Egg white
Panko green herbs

Preparation
- Make beurre noisette.
- Mix the beurre with the truffle honey.
- Cut the brioche to the desired size and brush it with the mixture.
- Slowly fry them in a pan over low heat.
- Cut the manchego to the desired size.
- Coat it in flour, egg white, and panko.
- Fry at about 175°C for about 2 minutes.
- Place the manchego on the brioche, top with chives, the violets, and drizzle with extra truffle honey.
