
Strawberry coupe with Chantilly cream
Shaved ice with Boiron strawberry puree, strawberries, and strawberry liqueur.Ingredients
fresh strawberries
strawberry liqueur
Cream plus mascarpone
Strawberry purée
Lemon balm
Ice shaver
Preparation
- Clean the strawberries and cut into quarters.
- Marinate in a little strawberry liqueur.
- Whip the cream plus with a little sugar (to taste) until soft peaks form.
- Pour the strawberry puree into plastic containers and freeze.
- Cut the lemon balm into julienne strips.
- Scoop the marinated strawberries into an ice-cold bowl.
- Spoon some of the cream on top.
- Shave the ice with the fine blade and place on the strawberries.
- Garnish with the lemon balm.
