Shiraz & apricot

Shaved ice is the trend. We also call it ‘snow in the summer’. In this recipe, we use Boiron apricot puree.

Ingredients

250gQimiQ
60gSugar
150gShiraz wine

Lemon thyme
Frozen apricots
Anise syrup

150mlSugar syrup
400mlWater
250mlapricot purée
100mlLemon juice
Ice shaver

Smoked almonds

Preparation

  1. Blend everything together in the food processor until smooth.
  2. Pour into glasses and let set in the refrigerator.

  1. Dip the apricots in the syrup and caramelize with a blowtorch.
  2. Cut into brunoise and mix with some lemon thyme.

  1. Mix well and freeze in cups.
  2. Shave with the coarse blade into shaved ice.

  1. Spoon the apricots onto the shiraz mousse.
  2. Spoon the shaved ice on top.
  3. Grate some smoked almonds over and garnish with lemon thyme.
