BBQ pineapple & rum

Shaved ice is the trend. We also call it ‘snow in summer’. In this recipe, we use Boiron pineapple purée.

Ingredients

Fresh pineapple
Malibu
Ice shaver
Exotic fruit crumble
Pineapple purée

Preparation

  1. Pour the pineapple purée into plastic containers and freeze.
  2. Clean the pineapple and cut into even pieces.
  3. Then marinate (vacuum works best) in Malibu.
  4. Remove from the marinade and grill the pineapple on the barbecue.
  5. Let cool before use.
  6. Scoop the pineapple into a chilled coupe.
  7. Shave the ice with the fine blade and spoon onto the pineapple.
  8. Garnish with the crumble.
